I noticed mixing a song with the mixer and exporting to MIDI had no effect on the volume levels different instruments have over each other.
Can someone recommend a MIDI mixer that can maybe export to mp3 or wav?

I think timidity is the easier way:
timidity -Ow -o filename.wav filename.mid
As default in ubuntu timidity uses freepats that don't have all instruments.
you could configure a different soundfont:
fluid-soundfont-gm is available at ubuntu repositories, just install and configure it at /etc/timidity/timidity.cfg file.

How many beats would you say you justbeats make in a week? I have on and off
